Chilled Cucumber Dill Salad

A refreshing salad of cucumbers in a slightly sweet dill and mayonnaise dressing, this is a summertime family favorite to accompany grilled hamburgers, hot dogs, sausages, or barbecue.

Cucumber season is summertime. Coincidentally, summertime is also the season for poolside family feasts--complete with grilled delights like brats and burgers, or barbecued brisket, ribs or pulled pork. This easy summer salad can be prepared before the guests arrive, chilling to perfection in the fridge until time to layout the spread.


Ingredients

  • 4 medium cucumbers, peeled and sliced thinly (e.g. 1/8" or so)

  • 1 cup mayonnaise

  • 1/4 cup white sugar

  • 4 tsp white vinegar

  • 1/2 tsp dried dill weed

  • 1/2 tsp salt

  • Optional: 2-3 green onions, chopped, divided for garnish

Directions

  1. In a large bowl, combine mayonnaise through salt and mix well.

  2. Add cucumbers (and 2/3 of the optional green onions) and toss.

  3. Cover and chill for at least one hour.

  4. Optionally garnish with the remaining green onions.
