Avocados are great, but guacamole is way better! Use it as a dip, a side, or a condiment on your favorite Tex-mex dishes.
During the warmer months, it's tough to beat lounging poolside with a scratch Margarita in one hand while the other scoops tortilla chips into fresh guacamole. Of course, it's more than an appetizer, even if it's hard to keep family or guests from diving in before the meal begins! Here is my foolproof guacamole recipe for consistently happy friends and family:
Ingredients
2 large, ripe Hass avocados
2 Tbsp minced cilantro (a.k.a. coriander), of both leaves (for show) and stems (for texture and flavor)
1 Tbsp minced, fresh jalapeno
1 Tbsp minced onion (any will do, but sweet white or red onions will have less bite)
Juice from 1/2 lime
1/2 tsp kosher salt
1/4 tsp garlic powder
1/8 tsp ground black pepper
1-2 Tbsp minced roma tomato
Directions
Pit and peel the avocados and place in a medium bowl.
Add the next ingredients through the black pepper, then crush and mix to desired texture with a fork.
Gently mix in the minced roma tomato
Check the flavor with a chip, and gently mix in any needed tweaks (e.g. more salt or jalapeno!)
Serve with your favorite tortilla chips, or just about ANYTHING! :)
