Simple syrup is used in many cocktails and martinis as the sweetener. Simple syrup is basically 1 part granulated white sugar dissolved in 2 parts water. The typical recipe involves using a stove top pot and stirring over low heat until the sugar dissolves, followed by lengthy cooling. It's. Too. Slow. This is an effective, fast, brute force way to make simple syrup:


Ingredients

  • 1 cup sugar

  • 2 cups water, divided

Directions

  1. Fill a tall glass with ice and water, and place it in your fridge.

  2. Put sugar and 1 cup water in a large, glass container. Microwave on high for 2 minutes.

  3. Stir until the sugar dissolves.

  4. Stir in 1 cup ice water (from the tall glass in the fridge).

  5. Place the glass container in the fridge to cool. Tip: you can put the container in a bowl with ice cubes to accelerate the cooling.

  6. Use once cool, or store in air tight container in the fridge.
