Homemade pineapple-infused vodka is the way to go if you can work in just a little planning. Something this good shouldn't be this strong, or is it vice-versa? You've been warned!
I recall it was a trip to San Diego, with that awesome, Pacific Rim influence coastal California can spoil you with. Everyone was recommending to me "you have to check out that pineapple-infused vodka martini!" Well, I did. And boy, did I. Crazy easy, but you need a couple week's planning. If you don't have the time, start a batch, but enjoy my Quick & Dirty Pineapple Martini in the meantime while the infusion works its magic.
The infused vodka is delicious. Really delicious. So much you may want to sip it neat or on the rocks. That's OK! :) Meanwhile, the pineapple pieces...it's as if the flavor of the pineapple magically migrates to the vodka, while the opposite is true to the fruit. Most of you should throw it out. Some of you, like me, may find those nuclear nuggets a special treat.
Ingredients for the Infused Vodka
750ml vodka of choice
1 whole pineapple
Directions for the Infused Vodka
Peel, core, and cut into chunks the pineapple
Combine in an airtight container and place in refrigerator for 10-12 days
Enjoy neat, on ice, or in cocktails such as the martini below!
Ingredients for Martini
2 jiggers (3 oz) pineapple-infused vodka
2 jiggers (3 oz) pineapple juice
Directions for Martini
Place your vodka glass in the freezer to chill it.
Fill a shaker with ice and add all ingredients. Shake for 20-30 seconds.
Take out your glass from the freezer, and strain martini into the glass.
Add an optional pineapple garnish, enjoy!
